Healthier Christmas Cookies Baking for the Holidays

So this past Saturday Gabriella and I baked gingerbread cookies for the holidays. We purchased all organic ingredients and used canola oil instead of butter or margarine.We also left out using eggs for various different reasons.There are many different substitutes however that is our personal preference. I recommend using cage free eggs and using Earth Balance Natural a vegetable buttery spread or organic like butter. The cookies were delicious and we used cherry brook vanilla icing a natural icing alternative to decorate the cookies along with organic  jelly beans, raisins, and carob chocolate chips all much healthier alternatives. Still to be eaten in moderation because remember that sugar in general is toxic to your body. Processed sugars like Fructose Corn Syrup are metabolized different in your body but certain companies try to hide that fact.Natural sweeteners are always better Agave, Organic Sugar and others you have to do your research . Less sugar is always better in general in it's most natural state


So your child can still have those yummy special holiday treats but with out the harmful effects. When I bake with Gabriella she feels engaged in something she loves to do and she is able to express herself creatively as well as learn the differences in using healthier options.That point then becomes reinforced in her mind when we shop for food.Til my next blog

Other Alternatives to Fast Food and Processed foods

Hello,

Today for lunch we stopped at the Perfect Pita  for lunch it was delicious!!! Just to show you how easy it is to make a conscious decision not to eat fast food ever..... There are always alternatives to eating poor Mal-nourished meals "with you guessed it" no vitamins,  no minerals, no nutrients. And when you are done eating you almost always feel tired , you may even have an upset stomach and sometimes still feel hungry because the food does nada ,nothing for your bodies systems or for your brain. Just good old fat, fructose corn syrup and carbohydrates with lots of grease...No you do not feel energized just sluggish and unsatisfied.You might feel a splurge of energy for a moment from the soda you drink and then that high energy changes to low energy and so you drink more sodium and sugar the never ending cycle. For more information on sugar visit Nutrition By Natalie.  How much fruit or vegetables did you eat or juice today should be the question to ask yourself everyday because without it you really are getting little to no nutrition and no fiber to move those fats and wastes through your body which also creates clogged arteries.Back to the lunch.

Dino and I both had Pita's for lunch. Mine was wheat his was white which we usually do not eat because white bread really has no benefits for your body. It tastes good !! We have  conditioned ourselves so that every time we are putting something into our bodies we ask ourselves if what we are eating will benefit us emotionally, physically and  mentally. So we read read read our labels. Go to Label Watch for lists of  unhealthy products not to eat.

Both Pita's were fried felafel which are chick peas mixed with spices in the form of a patty with tomatoes,lettuce,onions and tazini sauce a Greek white creamy sauce..I do not miss the lamb at all it was very delicious !!! And they have chicken pita's and other choices also salads, hummus with pita chips all fresh and home made and desserts and kettle potato chips.

One more thing they do serve ice teas, juices and soda however soda contains fructose corn syrup so if you must have a soda occasionally I recommend you do a natural soda or juice like Honest Kids which has very little sugar or  R.W Knudsen Family Spritzers which has no sugar added that comes in in grape,cherry and other flavors it will definitely satisfy your craving for soda.  Juice containing only sugar or agave is better then soda. Remember sugar in general is toxic to your body for more information on fructose corn syrup and it's effects on the body from a doctor watch the documentary The Bitter Truth 
Water is something Dino and I drink all of the time when we are out.  Distilled water is the best because untreated water can  also be extremely toxic and try to drink water from a glass because of the chemicals in plastic bottles are also very toxic or use a BPA free bottle
By taking small steps you are first making a conscious effort and commitment to yourself and your body to eat healthy everyday, maybe start with some organic foods in the beginning although we eliminated all processed foods from our household and went completely local/organic once we understood the harmfulness of processed and benefits of eating organic it became a priority. Every one's situation is different it really is about your priorities. Also eliminate soda from your family's diet all together. Incorporate local,organic produce by shopping around to find what stores are comfortable and convenient for you and your family to do  shopping. Your taste buds will retrain themselves and eventually crave only what is good for your body.This is the detoxification process.

You will soon be eating the best tasting most delicious foods you have ever tasted you will wonder what you were thinking all these years because the food is now so fresh how could you or anyone else for that matter have missed this!!!!You won't want any of the other processed garbage you used to feed your body ever again!!! Your energy and clarity will go to new heights. The foods you are currently eating have chemicals that make you become addicted like a drug addict  or alcoholic and because they have no nutrients for your body to digest is why you are always hungry and eating more of the same foods.

Eating Healthy On the Go and Supporting the Green Movement

Good Day to everyone,


So yesterday afternoon Dino and I decided to take our Live Green membership card and test it out for lunch at the Cafe Green Restaurant in N.W Washington D.C.


Live Green is an organization that helps local organic, environmentally friendly restaurants, businesses , Eco-friendly products and operation,and high quality affordable services by promoting them and offering potential customers discounts to the restaurants. 

A  yearly donation is required for the discount card but every bit helps and it gives you and your family exposure to many different products,services and good food you may not have known existed. The cost is $18.00 per year and is good for 1 year and every year it renews unless you cancel it. The products and services are amazing because it save on where you eat ,shop,cleaning services,workouts,utilities,business services,Spas all geared towards Green Living/Healthier Environment.Their standards are very high. You may also get discounts online. Excellent Resource!!!

For one it is supporting businesses that care about the quality of food it is giving there customers, two it  supports the local farmers and three it supports the environment so that toxins and unnatural products are not being released into the body or the air in the form of food processing, fuel for food delivery and the use of pesticides or herbicides( toxins)spraying using machinery like aerial sprayers which require oil .Both of these substances create toxins in the air, water and our food supply.

Back to our visit to Cafe Green we ordered a veggie burger with cheese and a non-chicken chick'n sandwich with chips, vegan nachos, and a strawberry shake which included an ice cream alternative called Rice Dream and fresh strawberries and all I can say is Yummy and I felt great after words not bogged down.

Everything tasted fresh and was organic. I did not miss the traditional burger loaded with fat cholesterol, hormones, antibiotics. The milkshake contained no fructose corn syrup. The cheese was amazing it was daiya cheese a non dairy cheese it tasted very cheesy to me.


I give the Restaurant 5 stars for taste and quality!! Amazing  food very satisfied customer Do yourself a favor and stop by for lunch or dinner.

Thanksgiving Tips For the Family

Hi everyone, 

I hope you had a wonderful holiday with your families if you celebrate Thanksgiving or not!!
My daughter Gabriella and I baked two pies for the occasion. One pie was a double crusted apple pie with fresh organic apples and the other ingredients were organic of course. The other was  pumpkin pie all made with organic ingredients from Whole Foods. Any store Wegmans.com that carries organic foods or the farmers markets will do.

I got both recipes off the Wholefoods website which has tons of great healthy recipes and they also have a shopping list application which of course you have to sign up for using your e-mail address.

You can then add all of your ingredients from any recipes you have found along with your other shopping items and the application will allow you to save your shopping lists and your recipes.

You may then either print it out, e-mail it to your self or what I do is have it sent straight to my phone so I can pull it up while I am out shopping which makes life so much easier because I take my phone with me everywhere.

Go to WholeFoods and click on shopping list after creating your account first of course.

We had a delicious dinner at my brother in law Michael home in Pennsylvania about 1 hour and 20 minutes from Washington D.C.

We ate fresh corn on the cob from a nearby farm, organic stuffing and mashed potatoes among other things. We drank Santa Cruz Organic Juice, and Spring Water.

For those of you who do eat turkey we highly recommend getting an organic or  farm raised turkey free from hormones and anti-biotics.

Eatwellguide.com has a listing of local,organic, Eco-sustainble super markets,farmers markets,restaurants etc.all categorized by business types and food types are also available for example kosher or gluten free etc.

It's a great resource and tool to help you and your family plan healthier alternative meals for a healthier lifestyle for cooking at home and for those times when you are eating out.

The website is also national so you can share it with your friends and family.

The eating guide gives you the specific locations of the different businesses as well as directions and mileage.

Healty Alternatives for the Family

Hi Everyone,

Wow yes it has been a while since I have posted but we are back in the loop of things !!!! So on October 15th we did a "retraining the tastes buds" nutritional segment held at our daughters school The CAPCS Butler Campus in Washington D.C..We introduced our Healthy Eating and Fitness Progam for the 2011 school year and handed out alternative food sample packages to the parents courteousy of GO MAMBO so they could try healthier options to give their children.

There was also a table set up for them to sample some other things like the Oat bread, and organic strawberry jam,  organic berry juice,and granola flaxseed bars. All of the ingredients were listed along with their nutritional benefits in a handout sheet.

The event was fun and the parents were able to engage and discuss the importance of eating healthy and to address their specific concerns and ask questions about the negative effects of not eating healthy. Informative links were also distributed for them to do further research.

The whole point of the initiative is to inform and educate parents so that they feel empowered to make healthier decisions concerning their family's health with facts that are often not disclosed openly to the main stream public.

The parents were extremely grateful for the the information!! The event was a success!! Yeah!!! Next up is our Soda Challenge. Until next time...

What Is Great About Juicing

Wow what a day!!! But I feel good even though it’s 10pm at night. Let’s hear it for the Veggie Juicing I did early this morning I made a green juice with my juicer using the recipe from the documentary “Fat, Sick and almost Dead”. It is made with 1 cucumber, a bunch of kale, ½ lemon, thumb size piece of ginger,2  granny smith apples, and 4 stalks of celery. What a boost of energy you get as well as detoxing all the toxins and fat from your body. You also lose weight and feel great! .We do it 3 days week and during that time we also eat light foods like fruit and salad.

My question to you tonight is are you living to eat or eating to live? That is the question of this century. We as Americans are accustomed to eating  quick, easy ,sweet, fatty, malnourished, larger than life super size me portioned meals, with little to no fiber. Fiber is necessary to clean our bodies systems out along with the fat and toxins kind of like a plumber cleans out your kitchen  sink. Without fiber the sludge stays in the cells of our bodies and creates a bulge in our tummies, chronic fatigue, diabetes, cardiovascular disease, high cholesterol and a host of other diseases and chronic problems and immune deficiencies .We then pass on these negative habits to our children.

We have a serious problem today with obesity in our society amongst adults but 1 in three Latino and African American children being obese, that should be a crime. This is the first generation of kids that may actually die before their parents do that is scary.

It all started with our parents and what they taught us about food. I remember my parents saying take your vitamins and make sure you eat your salad and greens, eat slowly. I remember my parents trying their absolute best to give me balanced healthy meals or at least they thought they were healthy. Balanced maybe to a certain extent but not really.

I was given Capt’n Crunch and Cinnamon Crunch for breakfast on weekdays because that’s what I saw on television and wanted. I do not believe my parents really understood the dangers these bowls of sugar contained. Nor did they know that the USDA requirements for one person eating sugar is 7-9 teaspoons a day. The average American consumes close to 40 teaspoons a day Yikes!!Visit Nutrition by Natalie you will be very surprised she gives you actual visual demonstrations in video formats of how much sugar we actually consume  as Americans versus for example the Japanese diet. It is truly jaw dropping, insane, crazy I do not eat that much sugar you think … but you do it all adds up.

Our parents did not know about the ridiculous, outrageous food additives, colorings, food preservatives, fungicides, pesticides, GMO’S, RGBH, all poisons /toxins to our bodies. They did not buy local organic foods. Most of the foods on Americans plates on average have traveled 1,500 miles from where they originated as opposed to local produce from a local farm and just picked from the field. There is already a deficiency in our soils because of the  massive food production plants and how they treat the crops  and the gmo crop contamination, as well as the Drug I mean meat factories of treating animals with hormones ,antibiotics, and feeding them garbage.

On the brighter side of things there are many many resources... food advocate and consumer protection agencies, non-profit companies all available to educate and inform the public on these very serious issues.They all have put them selves out there to say Enough of corporate profit at the expense of the American people who do not know why and do not know where to look and are growing sicker by the day.Those organizations have all done their research and diligence as we have.
Help is here We are the Why!!!Our goal is inform parents and arm you so to speak ...so you can make better decisions and life changes concerning food, diet and exercise for your selves and your children.It is a life style and you will never regret it.We will provide our stories,our own personal journey as a family, pictures, videos, links to informative websites, recipes all to help you make the changes necessary one step at a time.
Our other objective is to get families feeling confident in the kitchen again cooking delicious wholesome healthy meals for their families as well as making healthy lunches for their kids so they do not feel inclined to take the short cut ..fast food the road to an early death for sure.

To Market, To Market To Buy Some Good Stuff!

So   it’s Saturday night and we just finished a great day with our wonderful  six year old daughter Gabriella. We spent some time today and last weekend at our local farmers market . It is now her favorite activity she actually looks forward to going to the market. This particular market is located in Silver Spring, Maryland  and starts at 9am-1pm. We make it a weekly family experience it’s a lot of fun.
 We encourage Gabriella to pick out her favorite fruits and vegetables at the market. Last week she picked nectarines, peaches, kale and fresh corn!! Wow the fruits and the corn were so sweet and juicy she loved them and she had a sense of purpose, pride and involvement.
  
Today at the market she asked for a  snack and we gave her a nectarine which she was very content with. We do allow her to have treats, like today, at the movies we saw Cars 2; we had popcorn and M&Ms but we made  that choice at least knowing consciously… that is the true power…. what chemicals are in M&Ms especially the coloring and that the popcorn if butter is added has cholesterol. So it’s occasionally a treat for her but most of the time it’s organic baked sweets or Rice Dream (an alternative ice cream) in moderation of course.
Our daughter Gabriella loves the fresh salsa we get from Chef Elroy she loves the medium flavor because it has a little kick to it’s not to spicy either. Next week we will try the Mango flavor  she can’t wait.  I must admit it is the tastiest and freshest salsa I have ever tried. The salsa was also a hit with her beautiful cousins and our nieces Ruby Lu and Kaniz. The came to our home last weekend and devoured the salsa and chips and they Love to eat sweets and foods that are not good for you and are usually extremely over processed, so we were thrilled. We are trying to encourage them to eat healthier alternatives as well as introduce them to their parents. So far the apple, banana, kale, orange, and strawberry fruit drink with agave a (natural sweetner ) is also a hit. I use our juicer to make the drinks and Voila!, they always want more. It’s always fresh local organic fruit that I use for our daily juicing and our smoothies.

The kids get all the vitamins, nutrients, and calcium right from the source in one drink and want more because it is sweet but natural sweet. We also encouraged them to be involved with the shopping when we take a trip to the Whole Foods Market to shop. We took all three girls shopping last weekend and they were thrilled.They helped pick out the fresh vegetables and fruit and other organic products .It really makes a difference when they are involved in the process of choosing healthy  foods and preparing them.  They also,  particularly Gabriella, now make a habit of reading all labels on the foods  we are purchasing and have in the house. For most  kids it’s fun, Especially when it’s been explained to them over and over again the benefits of eating healthy and the very negative effects of not eating healthy.

The Body is a person’s Temple and you only have one so it should be treasured more then anything  in life because you only get one body in your  life. This is Why we choose healthy eating to be a lifestyle not a diet and we have been toxic free for over one year by making a conscious choose to eat only organic  foods and when we have anything else every blue moon we feel the difference and the pain shooting through  parts of our body . Even eating a piece of cake that has fructose corn syrup you can feel the difference in your body. Unfortunately the majority of the population have not made the commitment yet to eat only organic/local foods. So even though we usually travel with our own food because once you change to organic you never feel the same again. We are sometimes in a position where we bite the bullet and go off the organic trail for a minute or two.

We spent a a lot of time at Dino’s Brother’s home in Stafford, VA over the summer and we do our best to bring up organic cakes when we can for birthday’s. They certainly taste better, that’s for sure. We eat like Kings  and we are healthy that is the truth our food is delicious so yes it’s worth the extra cost, every penny of it. It is not that substantial of a difference. If you had a Rolls Royce would you put cheap gas in it?, is my question to you this evening? So why would you put toxic, over processed food with no nutritional value in your body ,Nada.

Before I go until next  time a wonderful  recipe to try is Barbeque Seitan Sandwiches .Seitan is a meat alternative made out of wheat  so it has lots of protein and it has a meat like texture YUMMY YUMMY .You don’t even miss the pork/beef/chicken but you can of course substitute. I recommend lean organic/kosher meat, preferably chicken. Add a green salad and fresh corn organic of course  and you won’t  regret it or need dessert. You can make your own dressing or buy your  favorite organic brand. Adding apples or pears is good because kids love the sweetness and the texture. And of course buy the barbeque sauce organic. Why A New Approach To Healthy Eating?

So it's midnight and I am inspired to write, after working all day, and to introduce myself. I am Kim Mendoza the other half of our whole being Dino and I share.
Why do I feel inclined to write this late after a long day you say !!!Well I feel great and I want to share my greatfulness and appreciation to all that want to hear our story.
 
Today was a wonderful day. I am alive and we are feeling well!! Dino and I started juicing this past Monday August 25, using a detox juicing only program we watched on a documentary on Netflix called "Fat, Sick and Nearly Dead". Joe Cross the creator of this wonderful film inspired and challenged us to take another look at ourselves individually and step up  our game to our commitment to implementing  with Great Urgency our Health Wellness and Fitness program focusing primarily on the childhood obesity crisis we are faced with today in this nation. It is alarming and concerning how sick this nation really is.

This juice fast detoxification experiment has forced us to take our eating routine lifestyle to another level. Yes Dino and I and our beautiful daughter Gabriella have been chemically, hormone, and toxin  free for the last year and feel good but we are still moderately overweight ... but why? Everything we eat is organic, no dairy, we eat lean turkey and chicken, we juice at least 3-4 times a week, and we eat grains no white bread. Our snacks have no preservatives, additives, high fructose corn syrup etc... you know the deal... We have been feeling very good and energetic with our lifestyle change but now we are almost  feeling fantastic!! Answer to why I am up this late when I have to get up early in the morning!!

We started this journey to be healthier because we felt powerless in the beginning without the why, and because we wanted better for ourselves and for our daughter and now we want to help and empower others their children and  their parents with our new knowledge while we continue educating and helping ourselves to live better longer healthier lives.Knowledge is power!!! It's the key to true bliss...

Our journey begun 10 years ago when I told my husband  that something was not right. I am to young to be constantly fatique at only 30 years old,having such discomfort during my menstrual cycle, being constantly emotional and moody, not being able to focus and function normaly during this time. My thoughts were not as clear as I wanted them to be I was easily distracted. I got colds easily and or headaches. As recent as one year ago my daughter had ear infections and allergies, colds, runny noses, fevers etc... I also had what could be considered allergies and pains in my joints at 35 years old until the pain stopped when we completely changed our diets we would change our quality of life. Now I am 41 and loving the mental clarity and no pain in my back or joints and I have reduced considerably discomfort during my menstrual cycle and My daughter Gabriella has no more symptons of coughing or being sick it's a miracle. You truly are what you eat... Period!!!!

But why has this information been hidden for so long? Where do we find out what to do to change? Where do we get those resources to help us change our childrens live for the better and for ourselves?

Question: Did you know that all diseases including ADHD are caused by being nutrientionally deficient ? Hence local, seasonal, organic food is the Cure. Simplicity is the answer, "let the food be thy medicine". 

"We Are The Why" is our deepest passion. It is to created to answer questions common among parents .

How Can I Find Food Without The Extra Stuff?

I do more shopping now than I have in the last 30 years. I didn’t particularly like shopping at all but we had to eat. Now I spend at least a minute of time looking at each product. The rule of thumb I have is, if  it has an abbreviation, more than two words or more than ten letters that I don’t know, I put it back. A few of the resources that I have found useful for shopping for food, that I loaded on my smart phone, is True Food, The Center for Food Safety’s food network site (http://truefoodnow.org/shoppers-guide/ ) and Label Watch 
( www.labelwatch.com ) in my book marks.

When I started reading labels in the store, it became very time consuming. I decided to use True Food to select supermarkets and the Label Watch site to build the lists of foods without the extra stuff. The Label Watch site can also be used to inventory the fridge and cupboards, so stuff can be cleaned out.

By now I have worked my way through so many products that I can tell by the vendor or manufacturer which ones go in my cart and which ones don’t. Recently, I have taken a second look at items that had used alternative sweetners or coloring to find that they have changed ingredients to safer ones. This isn’t common enough, but voting with your debt card or feet works in our economy. 

For those who don’t have phone with internet access, on  a pc there are pocket guides that you can request or print out. For the Label Watch you will have to print it out or write it out by hand. In any event, taking these guides along will give peace of mind knowing you are not bring something home you didn’t want.

Where Can The Information Be Found?

Finding information on nutrition and the state of the food system is far simpler than you can imagine. In this age of Wi Fi and smart phones it is easier to find information than it was less than a decade ago. Sorting through all the information becomes the challenge. 

There are hundreds of sites and thousands of articles that pop up when you Yahoo or Google. If you want the most current and credible information, you need to use the advance search options of the search engine. The point is always question the answer to a question until it is no longer is a question but a fact. When dealing with information, some except what they get at face value. That is what the problem has been concerning our food system. It is what the businesses, which are not looking out for anything but profit, count on. Unless you are thoroughly familiar with the federal, state and local regulations in the food industry, you are at a supreme disadvantage to knowing what is wrong with the food you are eating.

And let me be clear about this. There are many things wrong with the food you are eating. Further more the corporations and government agencies are fully aware of it. This is not conspiracy or fiction. It is a bona fide and verifiable fact. The question then becomes the proverbial “What did they know and when did they know it”. Once you become familiar with that, then the answers to “what can be done” come from the how it was done.

Everything that we write in this blog has been checked and re checked through multiple sources. But we don’t expect or want you to take our word for anything. That would just continue the pattern of acceptance that creates most problems. Question everything is what I say, even what you read in this blog. Feel free to cut and paste anything suspicious or what tickles your BS meter. I invite you to do it and comment here in this blog.

So WHY Start A Healthy Eating And Fitness Initiative

This blog will have articles from both Kim and Dino Mendoza, founders of 5 Flavors Of Chi.

5 Flavors Of Chi was an idea born out of my wife’s passion for cooking. We had, for years, spent time talking about starting a business but I didn’t see how starting a restaurant would be anything but a long hard road to no where. I didn’t feel it, I mean really feel that another restaurant was something that was needed. I was not excited about eating out at any restaurant that I knew of. I didn’t get what all the excitement was about dinning out was to begin with. Food was not exciting. Why was food not exciting?  I wouldn’t learn the real reason for another 10 years.

In the summer 2010 we decided to draw out an approach to build a restaurant that we would go to. It was during my research of the restaurant industry and the food system in general, that I began finding disturbing information.

As most people who research information on the internet, I was coming across articles that were warnings about the negative effects and down side to my search topic. And as I did further cross referencing and checking the information, a pattern of a serious issue began to surface. Our food system had been contaminated! Not just one item or recall notice but thousands of thousands of reports and case studies on the most common foods we were eating. I have some college, so I put all of the information and data through many research filters, only to come to the same result. Obesity is a real epidemic, not just the common public service announcement.

Studying for months the history of the problem, the need for a restaurant alternative began to develop. It began to become clearer what form it should take. We spent the rest of the summer discussing how to go about creating the business. I put together an outline of the menu and developed a pilot program.
I introduced the pilot program (5 Flavors Of Chi, Healthy Eating and Exercise Program) in the school my daughter was attending. It was received fantastically by the parents and school staff. I finally began to understand what made food exciting. Finding good (healthy) food was exciting and really understanding the nutritional value of healthy food was what was missing.

Although we have had success with the program this year, it was almost a decade in the making. In the spring we put together a parent engagement approach to the healthy eating and fitness program for the school. We began right where we were, at our daughter’s campus.

Our experience showed us many things we had in common with the other parents. Two things in particular were the shock that the food system was so unhealthy and full of ingredients that shouldn’t be there and outrage that it had been going on for decades. The other was that most parents naturally want the best for their kids, If they only knew for sure, what there choices were; they would make the one that was best for their family.

So why is there so much in our daily diets that create concern and problems for us?

That is WHY we have this blog. We will be putting what we have found and ask that you put what you find in this blog. I will begin with the link to Food Matters and encourage that parents check out the video.
